A delicious and easy one-pot recipe that combines the flavors of spicy sausage, savory black beans, and fluffy rice.


Ingredients

  • 1 pound of beef sausage, sliced
  • 1 cup of uncooked white rice
  • 2 cups of water
  • 1 can of black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the sliced sausage and cook until browned, about 5 minutes.
  2. Add the chopped onion and minced garlic to the pot and cook until the onion is translucent, about 3-4 minutes.
  3. Add the uncooked rice to the pot and stir to combine with the sausage and onion mixture. Cook for 1-2 minutes.
  4. Add the water, cumin, paprika, salt, and pepper to the pot. Stir to combine and bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes or until the rice is cooked and the liquid has been absorbed.
  6. Stir in the black beans and cook for an additional 2-3 minutes or until heated through.

Notes

You can customize this recipe by adding diced bell peppers or chopped tomatoes, using different types of sausage, or adding a sprinkle of chopped fresh cilantro or scallions on top.
