- 1 pound ground beef
- 1/2 cup teriyaki sauce
- 1 cup cooked white or brown rice
- 1 cup mixed vegetables (broccoli, carrots, bell peppers)
- 1 tablespoon sesame seeds
- 1/4 cup chopped green onions
- 2 tablespoons vegetable oil
- Salt to taste
- Black pepper to taste
Instructions
- Cook the rice according to package instructions until tender.
- Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
- Add ground beef and cook until browned, breaking it into small pieces.
- Add mixed vegetables and cook for 3 to 5 minutes until tender-crisp.
- Pour teriyaki sauce over the beef and vegetables and stir well.
- Bring to a simmer and cook for 2 to 3 minutes until the sauce thickens slightly.
- Place cooked rice on serving plates.
- Top with the beef and vegetable mixture.
- Garnish with sesame seeds and chopped green onions.
- Serve immediately.
Notes
Use chicken, turkey, or tofu instead of ground beef if desired. Serve with noodles instead of rice for variety. For a low-carb version, serve over roasted vegetables or salad. Add red pepper flakes for extra heat. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for 1 to 2 minutes or on the stovetop over low heat.
