Description
A hearty one-pan Cheesy Taco Rice Skillet made with seasoned ground beef, rice, salsa, beans, corn, and melted cheese.

- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- 1 cup long
- grain white rice
- 1 3/4 cups beef broth
- 1 cup salsa or Rotel
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 to 1 1/2 cups shredded cheddar or colby jack
- Salt and black pepper to taste
- Chopped cilantro, green onions, sour cream, or diced tomatoes for serving
Instructions
- Heat a large skillet over medium heat and cook the ground beef until browned.
- Add the onion and cook until softened, then stir in the garlic.
- Stir in the taco seasoning.
- Add the rice, broth, salsa, black beans, and corn.
- Bring to a gentle boil, then reduce the heat to low and cover.
- Simmer until the rice is tender and the liquid is absorbed.
- Remove from the heat and top with cheese.
- Cover again until the cheese melts.
- Add toppings and serve hot.
Notes
Add a splash of broth when reheating to keep the rice moist. Use mild or hot salsa depending on your heat preference. Brown rice can be used, but it needs more liquid and more time.
