Description

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 large English cucumber, peeled and thinly sliced
  • 2 large tomatoes, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, cucumber, tomatoes, red onion, and parsley.
  2. In a small bowl, whisk together the lemon juice and olive oil to make the dressing.
  3. Pour the dressing over the salad and toss to combine.
  4. Season with salt and pepper to taste.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve the salad chilled, garnished with additional parsley if desired.

Notes

Add diced jalapeño for extra heat. Substitute parsley with fresh dill or basil. Add crumbled feta cheese for a tangy flavor. Store in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended.
