Description
A refreshing and healthy chickpea salad packed with protein, fiber, and fresh vegetables, tossed in a light lemon dressing. Perfect for lunch, dinner, or a healthy side dish.
Ingredients

- 1 can chickpeas, drained and rinsed
- 1 large English cucumber, peeled and thinly sliced
- 2 large tomatoes, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chickpeas, cucumber, tomatoes, red onion, and parsley.
- In a small bowl, whisk together the lemon juice and olive oil to make the dressing.
- Pour the dressing over the salad and toss to combine.
- Season with salt and pepper to taste.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve the salad chilled, garnished with additional parsley if desired.
Notes
Add diced jalapeño for extra heat. Substitute parsley with fresh dill or basil. Add crumbled feta cheese for a tangy flavor. Store in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended.
