  • 2 medium sweet potatoes, peeled and diced into 1

  • 1 can diced tomatoes
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon oil
  • Fresh cilantro, chopped
  • Fresh lime juice (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into 1
  3. inch cubes.
  4. Heat oil in a large skillet over medium
  5. high heat.
  6. Add ground beef and cook until browned, breaking it apart as it cooks.
  7. Add diced onion and minced garlic; cook until onion becomes translucent.
  8. Add bell pepper and cook until slightly softened.
  9. Stir in sweet potatoes, diced tomatoes, chili powder, cumin, smoked paprika, salt, and black pepper.
  10. Mix well to combine all ingredients.
  11. Transfer skillet to the oven and bake for 25
  12. 30 minutes or until sweet potatoes are tender.
  13. Remove from oven and sprinkle with fresh chopped cilantro.
  14. Add a squeeze of fresh lime juice if desired.
  15. Serve hot.

Notes
