- 1 tablespoon smoked paprika

- 1/2 teaspoon black pepper
- 1 tablespoon oil
- Fresh cilantro, chopped
- Fresh lime juice (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Peel and dice the sweet potatoes into 1
- inch cubes.
- Heat oil in a large skillet over medium
- high heat.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Add diced onion and minced garlic; cook until onion becomes translucent.
- Add bell pepper and cook until slightly softened.
- Stir in sweet potatoes, diced tomatoes, chili powder, cumin, smoked paprika, salt, and black pepper.
- Mix well to combine all ingredients.
- Transfer skillet to the oven and bake for 25
- 30 minutes or until sweet potatoes are tender.
- Remove from oven and sprinkle with fresh chopped cilantro.
- Add a squeeze of fresh lime juice if desired.
- Serve hot.

Use a cast-iron skillet for the best heat distribution and flavor. Do not overcook the sweet potatoes; they should remain tender but hold their shape.
