- 4 cups shredded green cabbage
- 2 cups corn
- 1 jalapeño, minced
- 1/2 cup chopped cilantro
- 3 green onions, sliced
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- Juice of 2 limes
- 2 tablespoons sugar or honey
- 1 teaspoon garlic powder
- Salt, to taste
- Black pepper, to taste
Instructions
- Combine the cabbage, corn, jalapeño, cilantro, and green onions in a large bowl.
- Whisk together the mayonnaise, sour cream, lime juice, sugar or honey, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the vegetables and toss until evenly coated.
- Taste and adjust seasoning if needed.
- Chill briefly before serving or serve immediately for the crispest texture.
Notes
Use fresh corn when available for the best flavor. Keep the slaw lightly dressed so it stays crisp. For more heat, leave some jalapeño seeds in the mix. Store leftovers in the refrigerator and stir before serving.
