Description

  • 810 corn tortillas
  • 1 pound ground beef
  • 1/2 cup shredded cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 jalapeno pepper, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: diced tomatoes
  • Optional: shredded lettuce
  • Optional: diced avocado
  • Optional: sour cream

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook until browned, breaking it into small pieces.
  3. Add diced onion, bell pepper, and jalapeno. Cook until vegetables are softened.
  4. Season with salt and pepper to taste.
  5. Warm the corn tortillas in a separate pan for about 30 seconds per side.
  6. Place 1-2 tablespoons of the meat mixture in the center of each tortilla.
  7. Sprinkle shredded cheese over the meat mixture.
  8. Fold the tortillas in half to enclose the filling.
  9. Fry the tacos in hot oil until crispy and golden brown, about 2-3 minutes per side.
  10. Remove and drain on paper towels.
  11. Serve with diced tomatoes, lettuce, avocado, and sour cream if desired.

Notes

Use ground chicken, turkey, or shredded beef as an alternative filling. For a vegetarian version, replace the beef with extra vegetables or beans. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F for 10-15 minutes or fry briefly until crispy. Tacos Dorados can be frozen for up to 2 months.
