Authentic Mexican Tacos Dorados made with crispy fried corn tortillas filled with seasoned ground beef, cheese, and vegetables. Perfect for a flavorful family meal or appetizer.

- 8–10 corn tortillas
- 1 pound ground beef
- 1/2 cup shredded cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 jalapeno pepper, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: diced tomatoes
- Optional: shredded lettuce
- Optional: diced avocado
- Optional: sour cream
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook until browned, breaking it into small pieces.
- Add diced onion, bell pepper, and jalapeno. Cook until vegetables are softened.
- Season with salt and pepper to taste.
- Warm the corn tortillas in a separate pan for about 30 seconds per side.
- Place 1-2 tablespoons of the meat mixture in the center of each tortilla.
- Sprinkle shredded cheese over the meat mixture.
- Fold the tortillas in half to enclose the filling.
- Fry the tacos in hot oil until crispy and golden brown, about 2-3 minutes per side.
- Remove and drain on paper towels.
- Serve with diced tomatoes, lettuce, avocado, and sour cream if desired.
Notes
Use ground chicken, turkey, or shredded beef as an alternative filling. For a vegetarian version, replace the beef with extra vegetables or beans. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F for 10-15 minutes or fry briefly until crispy. Tacos Dorados can be frozen for up to 2 months.
